RAW COCONUT AND LEMON ENERGY BITES

It's Monday and yet another busy week. I feel like getting my hands dirty and be super efficient! Fixing up the apartment ready to get all cozed up this weekend for 1st of advent, dealing with some of the hardest and most boring work of writing a thesis, and of course delivering a couple of blog posts I've really been looking forward to share with you! I also have a lot of fun things planned with friends :) As you can tell, I will be in need of extra energy to keep me going. To prevent me from turning into an obsessive and pubertal version of the cookie monster, I've prepared a simple and healthy snack to take care of acute blood sugar drops and keep me happy and energized through out the week. Hopefully.

These raw energy bites have been a staple food of mine for quite some time, so it's about time I share the recipe with you! I like to make them when I know I have a busy week ahead. If I feel my concentration sagging, then I can just open the fridge and grab a couple to nibble on while I continue writing/reading/photo editing/blogging or whatever. Om nom nom nom!

They are super easy to make, originally just three ingredients plus spices. This time however I didn't have enough coconut so I substituted half with almond meal which worked fine! If you want to you can skip almond meal and use 2 dl of desiccated coconut instead.

I love the combination of cinnamon and lemon! Raw treats like these ones can easily be a bit on the heavy, dense side, so the lemon juice and zest is a welcoming fresh and tangy addition. I roll the dough into small balls and cover in coconut oil in order for the sesame seeds and/or desiccated coconut to stick better.

These delicious raw treats are also wonderful as christmas candy! Last year I made a whole bunch of different kinds of naturally sweetened truffles, like dark chocolate & sea salt, date & rum, lemon & saffron fudge (perhaps a repost of those??) and chocolate fudge. Raw Coconut & Lemon Energy BitesMakes around 15

Ingredients:

  • 6 dried figs

  • 1/4 tsp sea or mountain salt

  • 1/3 tsp vanilla powder

  • 1 heaping tsp cinnamon

  • 1 dl / 0,4 cup desiccated coconut

  • 1 dl / 0,4 cup almond flour (can be substituted for more coconut)

  • zest from one small organic lemon + a squeeze of juice (ca 1 tsp)

  • coconut oil, desiccated coconut & sesame seeds to roll the bites in

Directions

Cut of the hard end of the dried figs. Put in a blender and mix until you have a smooth puree. If your figs are very dry and not the 'soft' kind, you can add just a little bit of water.

Add salt, vanilla, cinnamon, lemon juice and zest and mix a little while longer, or simply use a fork to blend everything thoroughly. Transfer to a bowl. Add the coconut and almond meal and mix with clean hands or a fork.

Roll the dough into approx one inch thick balls. Cover a plate with desiccated coconut and/or sesame seeds. Brush each ball with a little coconut oil, and roll on the plate with coconut/seeds until covered. Place the now ready energy bites on a plate and store in the fridge (I cover mine with plastic foil). Keeps for at least one week. Serve in between meals, pre or post workout, or as a side treat to go with your coffee.

Btw, I have a new header (again)! I love fiddling around in Photoshop so I couldn't stop myself from putting together another one hehe :) I hope you don't mind that they change fairly often... Layout is too much fun playing around with to let it stay the same all the time.
